31 day challenge- Day 19

1. Got some more zucchini – shredded and made into fritters

2 cups zucchini, grated or shredded

2 eggs beaten

1 tsp salt

1/4 tsp pepper

1/2 tsp parsley minced

1/2 cup parmesan cheese grated

3/4 cup flour

1/2 cup oil

Place zucchini, eggs, salt, pepper, parsley, and cheese in a large bowl and mix well. Add flour to bind ingredients. Heat oil in a large skillet. Drop zucchini mix by spoonful’s in hot oil and brown on both sides. Drain on paper towels. Serve hot or cold.  – 20-25 fritters
